SCALLOPS WITH SPINACH AND PASTA
INGREDIENTS:
DIRECTIONS Cook Couscous in 3/4 cp water. (Bring to boil, stir, let stand 5 min.) Rinse scallops and drain. Coarsely chop cleaned spinach. Sauté scallions, and garlic in white wine. Add mustard and mix well. Add scallops. Cook 2 min. Add Spinach and toss to lightly cook. Add Couscous and toss. Serve with chives and Parmesan sprinkled on top. (OR remove scallops when cooked. Serve Couscous and spinach mixture, top with scallops then chives and Parmesan.)
